Sicuramente starete pensando che il pan di spezie sia un dolce tipicamente del periodo natalizio ma anche no!! grazie al contest Moscato & Salato ho scoperto che si può utilizzare anche come base per delle tartine.
E’ da 1 anno che volevo farlo da quando ho partecipato a quel corso sulla pasticceria con il miele a Bologna ma poi si sa la vita scorre troppo di corsa e quindi eccomi qui dopo 1 anno finalmente a fare il pan di spezie.
Ce ne sono diverse varianti in giro per il web, io ho preso un pò quà e un pò là facendo una mia versione ad hoc.
E voi come lo fate??
Pain d’epices morbido a modo mio
120 gr di burro
75 gr di zucchero di canna scuro
125 gr di miele di melata Api & Api
280 gr di farina 00
2 cucchiaini da tè di zenzero in polvere
1/2 cucchiaino da tè di cannella in polvere
1 bustina di lievito per dolci
1 pizzico di sale1 vasetto di yogurt magro da 115 gr
2 uova
Foderate uno stampo rettangolare di 20 cm di lato con carta da forno.

In un piccolo pentolino far sciogliere il burro a fuoco basso, lo zucchero e il miele. Lasciate intiepidire.
Setacciare la farina, le spezie e il lievito e il sale in una ciotola (io nella planetaria).

Aggiungete lentamente la preparazione di burro e miele e mandare a velocità media; aggiungere le uova sgusciate e lo yogurt. Lasciare amalgamare bene. Versare il composto nello stampo e infornare a forno preriscaldato a 170° per circa 40 minuti. Lasciare raffreddare completamente nel suo stampo.
Il pan d’epices risulterà morbidissimo poi il giorno dopo invece un pò più compatto.
